The timeless omelet

To prepare the omelette, first break the eggs into a bowl, add the milk and a pinch of salt. Beat the eggs using a whisk, so as to mix them together with the milk.

Heat the pan on the fire and add a drizzle of extra virgin olive oil .

As soon as it's hot, pour the egg mixture inside; to understand if the oil is hot enough, try pouring a few drops first.

Cook the omelette over medium heat: with slow cooking the egg will remain softer.

The outside will have to be golden, as soon as it starts to coagulate on the edges, cover with a lid.

Swirl the pan gently to keep the omelette from sitting in the same spot for too long.

As soon as the omelette is soft on the surface, fold it into a crescent shape, wait a few seconds in the pan and it will be ready!
