Immediate freezing, in particular, preserves its nutritional properties and fresh flavour.

The frozen leaf spinach is ready in 3-4 minutes after the water starts boiling again and, after having drained and squeezed them well, they quickly become a tasty side dish or the ingredient of many nice recipes.

Delicious with butter, in a sour sauce with lemon, or sautéed in a pan with oil and chilli pepper, they go divinely with pine nuts and sultanas. Baked with a base of puff pastry or brisé, with or without ricotta, they give life to a delicious rustic savory pie, which is usually finished in an instant...
