You can prepare excellent pasta with pesto in just a few minutes: drain the pasta, remembering to add a little salt to the cooking water and pour the pesto directly onto the pasta. The pesto is prepared with fresh basil, sunflower oil, extra virgin olive oil, DOP Roman pecorino cheese and pine nuts, without garlic, to be more digestible and suitable for those who cannot tolerate it. A recipe of the Ligurian tradition, which comes to us from Genoa, as the name of the recipe suggests. An apparently simple preparation, but which requires mastery in the dosage of the ingredients, to obtain a well-balanced pesto.
